Remember 'Soylent Green'? I Think I Found A Recipe!

Do you remember that movie from 1973 starring Charlton Heston - 'Soylent Green'?  It's a classic science fiction movie about the now not so distant future in 2022.  When I saw this recipe I immediately thought of that film!  It would have been perfect to use in the film as a way to consume Soylent Green.  This 'retro' recipe for Green Goddess salad molds is from 1971.  It's described by Better Homes and Gardens as 'Elegant yet Easy'.  Please.  It is neither.  All I can imagine is dinner guests running away from the table if this blob was placed in front of them!  Without further ado...

Green Goddess Molds

1 - 3 oz. package lemon-flavored gelatin
2 chicken bouillon cubes
1 cup boiling water
1/2 cup cold water
1/2 cup green goddess salad dressing
1 Tbsp. lemon juice
1 - 14 1/2 oz. can cut asparagus, drained
1/2 cup diced celery
2 Tbsp. finely chopped green pepper

A rotary beater!
Dissolve gelatin and bouillon cubes in boiling water.  Add cold water, green goddess dressing and lemon juice, beating with rotary beater till smooth.  Chill till partially set.  Fold in asparagus, celery and green pepper.  Turn into six 1/2 cup individual molds.  Chill till firm.  Makes 6 servings.

Well, at least those 6 servings will reduce your 'friend' count by at least 6 - unless they tell their friends...and so on.  

Just a quick word about Green Goddess dressing.  While this recipe calls for some of the commercially packaged dressing, it has been around since the early 1920's and has gone through several revisions.  In the beginning, all recipes for green goddess dressing included anchovies and a fair amount of tarragon.  If you want to research everything there is to know about green goddess dressing visit www.foodtimeline.org
